Mediterranean Inspired Turkey Bowls with Rice & Pita

If you frequent the recipe section of my blog you already know that I love making different types of protein bowls for dinner. Not only are they filling and healthy, but it is a good dinner idea if you want to keep your grocery bills on the lower side. In today’s post, I am sharing a simple and tasty Mediterranean inspired turkey with rice and pita recipe:

Ingredients:

  • Turmeric
  • Jasmine rice / white rice
  • Green onions
  • 1 lemon
  • 4 TBSP sour cream
  • 2 TBSP mayo
  • 1. tsp garlic powder
  • Ground turkey
  • 1 TBSP Shawarma Spice Blend
  • Pita or. Naan bread
  • Hot sauce
  • Olive oil
  • Salt
  • Pepper
  • 1 TBSP butter

Instructions:

  1. In a small pot, melt 1 TBSP of butter and add 1/4 tsp of turmeric
  2. Stir in rice and water (per the rice instructions). Add a pinch of salt and bring to a boil.
  3. Once boiling, reduce heat and simmer for 15 minutes
  4. Quarter the lemon and thinly slice the green onions
  5. Sauce: in a small bowl, stir sour cream, mayo, garlic powder, lemon juice and water until the sauce becomes a drizzling consistency. Add a pinch of salt and pepper
  6. Turkey: heat olive oil in a pan over medium-high heat
  7. Add green onion whites, and cook for 1 minute
  8. Add in the turkey, Shawarma spice, salt, and pepper
  9. Cook until browned
  10. Stir in 1/4 cup of water and reduce the heat to a simmer – cook until slightly thickened
  11. Rice: Stir in half of the green onions, salt and pepper
  12. Broil pita/nann or toast until slightly browned
  13. Divide the rice, turkey, and pita between bowls. Top with sauce, scallions, and hot sauce.
  14. Enjoy!
