My sister and I decided to cook dinner for the family this weekend and so I thought I would share what we made. [Let me know if you guys enjoy these food-related posts… they are a little different than what I typically do].

Being in the health kick I am currently trying out, I found THIS yummy and healthy recipe
on Pinterest. I think a fresh salad is perfect during the hot summer months when you don’t feel like cooking with a lot of heat and prefer something a little lighter but filling. This recipe is extremely easy and the only “prep time” comes from dicing the red onion and cooking the chicken. Other than that, if you have all of the ingredients you can just toss them into the salad.
Side Note: My sister and I opted to not make the dijon vinaigrette and just used a creamy poppyseed salad dressing instead.
