A Week of Dinners Volume 1: Social Distancing Series

I thought it would be a fun idea to dedicate a post to what we cook for dinner in a week of quarantine. Regardless of social distancing, we do try and cook at home at least 5 times a week so this isn’t out of the norm for us. On Sundays we plan our meals for the week and go grocery shopping for the ingredients. Having a menu definitely helps us stay on track with eating healthy and saves money. On Fridays and sometimes Saturdays, we do like having date night and enjoy trying new restaurants to celebrate the weekend. We are keeping up that tradition and doing pickup or delivery to help support local restaurants during these hard times.

Monday: Monday evening we cooked up a Sausage & Vegetable Skillet. Paul found the recipe from Taste of Home when he was browsing for dinner ideas that incorporate sausage, which we needed to use up. I wouldn’t say it is the healthiest dinner, but it was tasty and filled us up! Side note the recipe calls for corn but our grocery store was completely out of it.

Tuesday: Paul loveslovesloves Chipotle. That is probably the first thing I knew about him. Every now and again we will build our own Chipotle-inspired bowls at home. I love this meal because it is quick and you can easily make it healthy. We didn’t follow a recipe, but if you are looking for a guide check out this one!

Wednesday: I love a good chicken and asparagus dish and when I searched for some recipes on Pinterest I found this one for Garlic Butter Chicken Bites and Asparagus from EatWell101. This was probably my favorite meal all week. I will warn you, don’t be fooled by thinking it is an easy “one pan” dinner. It actually took awhile to make and we dirtied so many dishes!

Thursday: A hearty salad is a great way to end the week, am I right? When planning out meals for the week I aways forget how much I love a big salad for dinner. Although I do have to admit, after Wednesday’s dinner the salad wasn’t as exciting… But Paul grilled up chicken breast and we added in a bunch of toppings for a delicious and quick salad!
