My Summer Cookin’ series is back with a super easy chicken skewer recipe. I decided to make use of the gas grills on the pool deck at my apartment community. I prepared the chicken in a bowl and tossed it with garlic, thyme, olive oil, and a dash of salt and pepper. I threaded the chicken with orange sweet peppers on a couple of skewers and grilled the chicken and a corn on the cob for about 8 minutes each.
The recipe I used also called for a tomato salad consisting of tomatoes, scallions, orange zest, olive oil, and salt and pepper. However, I don’t care for tomatoes so I switched the salad with baked asparagus topped with parmesan cheese instead!
